Serra deConti Cicerchia

A rustic, humble pulse, cicerchie were once common throughout the Marche. Cultivated in spring, between the rows of corn with beans and chickpeas. The Serra de'Conti Cicerchie variety is tiny and irregular in shape. Its color ranges from grey to brown, and it has tender skin and a flavor that is far less bitter than that of other varieties. The pulse was once at risk of extinction, but some farmers in Serra de' Conti have continued to cultivate them, thus saving them for posterity.
